This pantry friendly pasta featuring Wild Planet Wild Mackerel in extra virgin olive oil is delicious and packed with flavor from caramelized onions, sundried tomatoes, toasted pine nuts, briney capers, fresh parsley and a squeeze of lemon juice. By choosing to incorporate mackerel into your diet, you are opting for a smaller fish that is more abundant and lower on the food chain, which means it is low in mercury and better for the environment.

Ingredients

  • 3-4 Tbsp Olive Oil, Butter, or a mix of both

  • 3 Onions, thinly sliced 

  • 1/2 cup finely chopped Sun-dried Tomatoes

  • 1 Tbsp Tomato Paste 

  • 1/4 cup toasted Pine Nuts

  • 2 Tbsp Capers, or more to taste

  • 1/3 cup chopped Parsley, plus more for finishing

  • 10 ounces Spaghetti

  • Reserved pasta water

  • 1 (4.4oz) can Wild Planet Wild Mackerel Fillets In Extra Virgin Olive Oil

  • 1 cup freshly grated Pecorino Romano 

  • Lemon juice, salt, pepper to taste

  • More butter or olive oil as needed

Directions

  1. Melt the olive oil and butter in a pan and then add the onions over medium heat. Once the onions soften fully, turn the heat to low and cook, stirring semi regularly, until caramelized. This can take up to an hour, so be patient! 

  2. Return the heat to medium and add the sun-dried tomatoes. Saute for 2-3 minutes and use your spoon to break up the tomatoes and onions.

  3. Add the tomato paste and saute for another 1-2 minutes until it begins to caramelize. Turn the heat down and add a splash of water to keep it from burning if needed.

  4. Add the pine nuts and capers and saute for 1 minute. At this point, you can take the sauce off the heat and wait until your pasta is ready if needed. Just make sure to heat it back up before adding the pasta water.

  5. Cook your pasta according to the package directions and drain, reserving 2 cups of pasta water. 

  6. Add 1/2 cup of pasta water to the onion mixture to start, and continue adding more if needed to create a saucy consistency. Season with salt, pepper, and lemon juice to taste

  7. Add the pasta and toss to combine, adding more water if needed. 

  8. Add the mackerel and pecorino and toss until just combined.

  9. Top with extra chopped parsley and enjoy!
