Sicilian Sardine Pasta

This easy pasta dish is ready in under 30 minutes. While this version is not authentic, it is full of flavor! If you haven’t tried Sardines, then I highly recommend you do, because they are high in omega 3 fatty acids, protein, calcium, iron, and so much more!

This recipe uses Wild Planet Lightly Smoked Wild Sardines in Extra Virgin Olive Oil. Wild Planet products are of the highest quality and are sustainably sourced.

Ingredients

  • Pasta of your choice - I used casarecce - cooked according to package instructions

  • 3 (4.4oz) cans Wild Planet Wild Sardines in Extra Virgin Olive Oil

  • 1/2 White Onion, diced

  • 1 cup Fennel (bulb part), chopped

  • 3 Garlic Cloves, minced

  • 1/2 tsp Red Pepper flakes

  • 1 Tbsp fresh Dill

  • 1 cup Golden Raisin

  • Pinch of Saffron

  • 1 cup Breadcrumbs

  • 2 Tbsp Olive Oil

Directions

  1. To a pan add 2 Tbsp olive oil and the breadcrumbs. Toast the breadcrumbs, but don’t burn them! Set aside.

  2. To a different pan, add the olive oil from one of the sardine cans, add onion, fennel and sauté until soft.

  3. Add minced garlic and cook for about 30 seconds. Add red pepper flakes.

  4. Add a pinch of saffron to a mortar and grind until it turns into a
    powder. Add the saffron to raisins and top with hot water and let it soak for at least 5 minutes then add it to the onion mixture.

  5. Add the fresh dill and sardines to the onion mixture and stir.

  6. Add the cooked pasta and stir. If needed, add 1/4 cup of pasta water.

  7. Serve with toasted breadcrumbs, fresh dill, and red pepper flakes.
