Sesame Chicken Salad

Makes 4 servings

Ingredients

4 cups finely chopped romaine lettuce
2 cups shredded purple cabbage
1 cup thinly sliced or shredded carrot
2 cans Wild Planet Organic Roasted Chicken Breast, torn into bite-sized pieces
1/3 cup chopped green onion
1/4 cup chopped cilantro
1 avocado, diced
2 Tbsp chopped peanuts

Dressing

3 Tbsp sesame oil
1/2 cup rice wine vinegar
1 tsp finely minced garlic
1/4 tsp pepper

Instructions

In a large bowl, combine romaine lettuce, purple cabbage, carrot, chicken, green onion, cilantro, and avocado chunks. To make the dressing, whisk together the sesame oil, rice wine vinegar, minced garlic and pepper. Toss salad with desired amount of dressing. Top with chopped peanuts and serve.

Wild Planet Chicken Tortilla Soup

Makes 2 servings

Ingredients

1 can (5oz) Wild Planet Organic Roasted Chicken Breast
1/4 cup diced onion
3 tsp finely chopped garlic
1/2 cup corn kernels
1/2 cup white beans, drained and rinsed
1/2 cup diced tomatoes
1/2 cup mild diced green chiles
1/2 cup cooked quinoa or rice
16 oz chicken or vegetable broth
2 tsp cumin
3 tsp oregano
1/4 tsp chili powder
Salt and pepper to taste
Toppings of choice (chopped cilantro, shredded cheese, tortilla chips, avocado, sour cream, lime, etc.)

Instructions

Remove Wild Planet Organic Roasted Chicken Breast from can and cut or shred into bite size pieces. Place in a bowl with juices from the can, set aside.

In a medium pot, heat the olive oil over medium heat. Sauté the onions in the olive oil until onions soften and become slightly browned. Add the garlic and cook 30 seconds, stirring to avoid burning. Add the corn, Wild Planet Organic Roasted Chicken Breast, beans, diced tomatoes, green chiles, and quinoa or rice. Stir to combine ingredients and pour in broth. Add cumin, oregano, chili powder and season with salt and pepper to taste. Stir soup and continue to cook over medium heat until heated through. Lower heat and keep at a low simmer until ready to eat.

Ladle into bowls and add toppings as desired.

Wild Planet Chicken Burrito Bowl

Ingredients

2 cups cooked quinoa
1/4 cup chopped cilantro, plus extra for topping
2 Tbsp lime juice
1/4 cup thinly sliced red bell pepper
1/4 cup thinly sliced red onion
1 Tbsp olive oil
1 can (5oz) Wild Planet Organic Roasted Chicken Breast, drained
1/2 cup canned black beans, rinsed and drained
Half an avocado, sliced
Queso fresco for topping (or cheese of your choice)
Spices for topping (i.e. cumin, chili powder)
Lime wedges (for serving)

Instructions

Toss cooked quinoa with cilantro and lime juice and spread into a serving bowl. Sauté the peppers and onions in the olive oil over medium heat for about 4-5 minutes or until lightly caramelized. Separate chicken into bite sized pieces. Place the chicken, peppers and onions, black beans, and avocado on top of the quinoa. Sprinkle with cheese and additional spices. Garnish with leftover cilantro and the lime wedges.

Wild Planet Chicken Hummus Wrap

Makes 2 servings

Ingredients

2 soft flour tortillas or spinach wraps
4 Tbsp hummus
1 cup raw spinach
1 can (5oz) Wild Planet Organic Roasted Chicken Breast, drained and shredded into bite-size pieces
1/2 cup chopped red bell pepper
1/2 cup chopped cucumber
4 Tbsp crumbled Feta cheese

Instructions

Spread half of the hummus on each of the two tortillas or wraps. Top the hummus with the spinach, chicken, bell pepper, cucumber and feta, using half the ingredients on each wrap.
Roll both wraps tightly and cut in half, if desired.

Wild Planet Chicken Avocado Salad

Ingredients

1 can (5oz) Wild Planet Organic Roasted Chicken Breast
1/2 avocado, flesh removed and cut into ½” chunks.
1/4 cup quartered grape tomatoes
1 Tbsp plain Greek yogurt
1 Tbsp lime juice
1/2 tsp lime zest
1 tsp chopped fresh cilantro
freshly ground pepper, to taste.

Instructions

Remove Wild Planet Organic Roast Chicken Breast from can and place in a bowl. Reserve can juices for another use*. Lightly flake chicken breast with a fork, creating bite size pieces. Add avocado chunks, grape tomatoes, toss lightly to combine. In a separate bowl, whisk together Greek yogurt and lime juice. Pour over chicken, stir gently to combine all ingredients. Add lime zest, cilantro and ground pepper. Toss gently and serve.

*Note: each can of Wild Planet Organic Roasted Chicken Breast will contain about two tablespoons of pure, natural chicken broth. This can be saved in a sealed container in the refrigerator or freezer for a number of other uses.

Wild Planet Chicken Waldorf Salad

Ingredients

1 can (5oz) Wild Planet Organic Roasted Chicken Breast
1/4 cup quartered red grapes
2 Tbsp chopped Granny Smith apple
1 Tsp finely chopped celery
1 Tsp chopped almonds
1 Tbsp plain Greek yogurt
1 Tbsp mayonnaise
Freshly ground pepper, to taste.

Instructions

Remove Wild Planet Organic Roast Chicken Breast from can and place in a bowl. Reserve can juices for another use*. Lightly flake chicken breast with a fork, creating bite size pieces. Add red grapes, Granny Smith apple, celery and almonds to chicken pieces. In a separate bowl, whisk together Greek yogurt and mayonnaise. Pour over chicken. Stir gently to combine. Season with ground pepper, serve.
