Tuna Green Bean Casserole

If Thanksgiving leftovers are your favorite, you’ve come to the right place. I LOVE repurposing leftovers, especially from the holidays. One of my favorite Thanksgiving dishes is Green Bean Casserole and this is a really easy way to reuse those leftovers and make a super healthy, nutritious weeknight meal.

One of my favorite Thanksgiving dishes is Green Bean Casserole and this is a really easy way to reuse those leftovers and make a super healthy, nutritious weeknight meal.

Ingredients

  • Leftover Green Bean casserole

  • 2 cups fresh Spinach, diced

  • 2 cups Cooked Rice, white or brown

  • 1 (5oz) can Wild Planet Albacore Wild Tuna

  • 4-5 slices of Cheddar Cheese

Directions

  1. Preheat oven to 375.

  2. In a 9x13 baking dish, add the leftover green bean casserole, spinach, rice and tuna. Combine together.

  3. Top with cheddar cheese slices.

  4. Bake for 20-25 minutes or until cheese is melted and browned on top and casserole is warmed through.
