Ingredients

  • 1 (4.4 oz) can Wild Planet Wild Sardines in Extra Virgin Olive Oil

  • 2 tsp Olive oil from sardine can

  • 1/4 cup Yellow onion

  • 1/2 Serrano pepper, thinly sliced

  • 1 tsp minced Garlic

  • 3/4 cup diced Tomato

  • 2 sprigs Thyme

  • ¼ tsp Black pepper

  • ¼ tsp Salt

  • 1/4 cup Water

  • 1 tsp Lime juice 

  • 1 tsp Parsley

Directions

  1. Drain oil from Wild Planet Wild Sardines and reserve. In a pan over medium heat, add oil.

  2. When the oil is hot add onion and sauté for 2-3 minutes before adding garlic and serrano pepper. Cook for about 1 minute then add diced tomato and sauté for 2-3 minutes.

  3. Next, add thyme, black pepper, salt, water and lime juice and allow to simmer for about 3-4 minutes until tomatoes soften and sauce thickens. 

  4. Add sardines and parsley then spoon sauce over sardines and cook for 4-5 minutes. Remove from heat and serve immediately.
