Skipjack Wild Tuna and Pasta


Makes 2 servings


5oz pasta of your choice
1 jar Wild Planet Skipjack Wild Tuna in Pure Olive Oil (6.7oz), undrained
1 clove garlic, minced
1/4 cup panko bread crumbs
1 Tbsp capers
1 lemon, juice and zest
1/2 cup fresh parsley, chopped
2 Tbsp parmesan cheese, grated


Cook the pasta according to package directions. Drain and set aside. In pan over medium heat, add the olive oil from the Skipjack Wild Tuna jar, garlic, and panko bread crumbs. Sauté while lightly stirring until garlic and bread crumbs start to slightly brown.
Next, add Skipjack Wild Tuna fillets, capers, and juice of one lemon. Cook until the Skipjack Wild Tuna is heated through. Add pasta and toss well. Add more olive oil if needed. Plate and garnish with parsley, lemon zest, and grated parmesan cheese.
