These bright and vibrant sardines are best on the first day; however, they can be stored in an airtight container for 2-3 days. The longer they sit, the more citrus flavor they will absorb.

Directions

  1. Drain the sardines and place them in a flat container in a single layer.

  2. Add the lemon juice, olive oil, sliced chili, cilantro, and a heavy pinch of sea salt.

  3. Allow the sardines to marinade for a minimum hour before enjoying.

  4. While these sardines taste amazing on their own, enjoy on a toasted baguette with a generous amount of salted butter topped with the chilies and cilantro. Other great options are sliced salted tomatoes, crisp Persian cucumbers, or thinly sliced radishes to add another fresh element.
